Bruscetta with Tomatoes, Mozzarella & Basil

INGREDIENTS:

  • 1 loaf rustic French bread

  • 3 Tbl Garlic Olive Oil

  • Sliced fresh tomatoes

  • Sliced mozzarella cheese

  • Fresh basil leaves

  • Basil Olive Oil to drizzle



  • STEPS:

    Slice the French bread and brush each side with the garlic olive oil. Grill on the barbeque or on a flattop grill until light brown on each side. This may also be done on a cookie sheet in the broiler.

    Serve. Let you guests assemble their bruscetta by placing the cheese on the bread followed by the tomato and basil. If fresh basil isn’t available, drizzle a little basil olive oil on top instead.

     

    NOTES:

    During the summer we often declare it “Tapas Night” and just have this and grilled vegetables for dinner on the deck.
