Pasta & Broccoli Slaw Salad

INGREDIENTS:

  • 1 cup uncooked whole wheat fusilli (or other pasta)

  • 1 bag (12 oz.) pre-washed Broccoli Cole Slaw (shredded hearts of broccoli, carrots & red cabbage)

  • 2 Tbl. chopped red onions

  • 1/3 cup pine nuts

  • 1/3 cup crumbled feta cheese

  • 1/4 cup chopped sun dried tomatoes

  • 1/3 cup fresh lemon basil or other mild fresh basil

  • 1/3 cup Meyer Lemon Olive Oil

  • Salt & pepper to taste



  • STEPS:

    Bring water to a boil and add pasta. Cook until tender. Drain and cool.

    Toss the pasta with the rest of the ingredients and you're ready to serve. If you make it in advance, take the salad out of the refrigerator 1/2 hour before serving. It's better served cool to room temperature, not cold.

     

    NOTES:

    Experiment with other fresh herbs and anything else that you have in the refrigerator. The combinations are endless! In this salad the fresh lemon basil, feta cheese and sun dried tomatoes really add a kick to the Meyer Lemon Olive Oil.
